Pancakes for Dinner

Pancake recipes for Fat TuesdayAlthough Pancake Tuesday has its origins in religion, marking the day before the beginning of Lent, we think it’s also a great excuse for a fun family dinner that breaks from the norm….serve pancakes for dinner!

The reasoning behind Pancake Tuesday, also known as Fat Tuesday or Mardi Gras, is that in days gone by families needed to use up rich food stuffs like eggs, butter and sugar before beginning their fast leading up to Easter. The tradition varies slightly from country to country. In Iceland people eat salted meat and peas, in Lithuania doughnuts are eaten in addition to pancakes, while in Poland it falls on a Thursday instead of a Tuesday.

From a mix or scratch, pancakes are delicous especially when served with real maple syrup, a side of sausage and some fresh fruit. Here is a traditional pancake recipe along with some delicious variations to mix things up.

Basic Pancake Recipe

Ingredients:

  • 1 ¼ cup all purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 1/3 cups milk
  • 1 egg
  • 3 tablespoons vegetable oil

Cooking instructions:

Combine flour, sugar, baking powder and salt in a large bowl. Stir in egg, milk, and oil.

Heat a little oil in a frying pan over medium heat. Drop pancake batter onto frying pan by ¼ cups. When top bubbles and bubbles start to burst, flip pancakes and cook until golden. Remove to a warm serving dish. Repeat with remaining batter.

Pancake Variations:

Peanut butter and banana pancakes
Prepare batter as above but add ¼ cup of peanut butter to batter. Slice a banana. When you first add batter to pan, drop banana slices onto pancake before flipping.

Chocolate Orange Pancakes
Prepare as above, but add ½ cup of chocolate chips and the zest from one orange to the batter.

Apple Cinnamon Pancakes
Prepare as above, but add one small cooking apple, chopped, and a ¼ teaspoon ground cinnamon to the batter.

Hawaiian Pancakes
Drain ½ cup of pineapple removing as much of the juice as possible and add to pancake batter. Serve with sliced ham.

Pigs in a Pancake
Wrap a sausage with a pancake and secure with a toothpick. Put maple syrup in small bowls for dipping and eat this one with your fingers!

  2. We love pancakes for dinner all year ’round! My husband & youngest son make peanut butter sandwiches out of their pancakes and eat them with syrup. I like pumpkin or sweet potato pancakes dusted with powdered sugar.

  3. I always try to make my daughter’s breakfast, lunch, and dinner healthy. I’d usually make blueberry pancakes, no salt, only a little bit of butter on it, no syrup. Or a blueberry breakfast muffin. Organic. No butter, or sugar. For a lunch. I’d pack apple juice, a sandwich, wheat bread, of course, meat, tomatoes, lettuce, and a little bit of mayo. Dinner, I’d sometimes make a veggie salad. I am trying to keep my weight off since I’m going to have a baby soon. Keep those ideas coming!
