Three Easy Breakfast Recipes for Mother’s Day

(With some help from dad!)

Breakfast in bed for mom is a tradition in many homes on Mother’s Day morning. Here are three simple recipes that kids can make for mom with just a little help from Dad. She will be delighted to see her family at her bedroom door bearing a tray laden with a glass of her favorite juice, a flower and one of these simple yet tasty recipes.

Mother's Day Recipe

Simple Blueberry Scones

Recipe Ingredients:

  • 2 cups flour
  • 2 ½ tablespoons baking powder
  • 2 tablespoons sugar, plus some for sprinkling
  • ¼ teaspoon salt
  • ¾ cup melted butter
  • 2 eggs
  • ¼ cup milk
  • 1 cup blueberries

How to Make It:

  1. Preheat oven to 350° and grease a baking sheet.
  2. In a large bowl combine dry ingredients.
  3. In a small bowl, mix butter, eggs and milk, then add to dry ingredients. Fold in blueberries and stir gently.
  4. On a floured surface, roll out dough to a 6” x 10” rectangle.
  5. Cut the rectangle in half and then cut each half across then diagonally to create four triangles. Place on baking sheet and sprinkle with a bit of sugar.
  6. Bake for about 20 minutes or until golden brown. Serve with butter.

A morning treat for MomFresh Fruit Parfait with Homemade Granola

Recipe Ingredients:

  • 3 cups rolled oats
  • ½ cup sliced almonds
  • 1/3 cup butter, melted
  • 1/3 cup honey
  • ¼ cup brown sugar
  • Granola

How to Make It:

  1. Preheat oven to 350°.
  2. In a large bowl mix honey and melted butter. Add oats, almonds and sugar to bowl and mix well.
  3. Spread out mixture on a large baking sheet and bake for about 20 minutes, stirring halfway through cooking time.


Recipe Ingredients:

  • 2 cups vanilla yogurt
  • 1 cup granola
  • 1/2 cup berries of your choice
How to Make It:

Add one cup of yogurt to a tall drinking glass, and top it with ½ cup of homemade granola and a ¼ of fruit. Repeat the layer with remaining ingredients.

A Mother's Day Breakfast Treat

Easy Egg Burritos

Recipe Ingredients:

  • 2 eggs, beaten
  • 2 tablespoons milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 green onion, finely chopped
  • ½ green or red pepper, finely chopped
  • 1 tablespoon butter
  • ¼ cup grated cheddar cheese
  • 2 flour tortillas

How to Make It:

  1. Melt butter in a small pot over medium low to medium heat.
  2. In a small bowl, combine eggs, milk, salt and pepper, green onions and pepper.
  3. Add egg mixture to pot and cook, stirring occasionally, for about 5 – 10 minutes, until eggs are fluffy.
  4. Sprinkle ¼ cup of cheddar down the centre of each burrito and divide the egg mixture on top of each, then fold up the burrito and serve.

    French toast is another very good choice, especially for younger children helping make breakfast. You picked something very healthy. You change what you put in eggs too just in case your mom doesn’t like green onions or bell peppers. Though bell pepper is good for you..

    I make the breakfast burritos quite often and my daughter loves them. I do add sausage or bacon and it makes them even better.
