If I have learned one thing since I started writing for Ganz Parent Club, it’s that every food seems to have its own month (Grilled Cheese Sandwich Month? Seriously?) Which brings me to the fact that this is Blueberry Month. These versatile berries are not only sweet and juicy, they’re also a great source of vitamins and anti-oxidants. While summer is the perfect time to enjoy fresh blueberries frozen berries can be just as good in baked desserts and pancakes during the rest of the year.

Here are some of my favorite ways to enjoy this Fruit of the Month.

Blueberry Muffins for Blueberry MonthBanana-Blueberry Muffins

Recipe Ingredients:

  • Muffin
  •  1 egg
  • ½ cup granulated sugar
  •  6 tbsp melted butter
  •  3 ripe bananas, mashed
  •  1 tsp vanilla extract
  •  1 ½ cups flour
  • 1 tsp baking powder
  •  ½ tsp salt
  • 1 ½ cups fresh blueberries

Topping Ingredients:

  • ¼ cup packed brown sugar
  • ¾ cup chopped pecans
  • 1 tbsp flour
  •  2 tbsp melted butter

How to Make It:

  1. Preheat oven to 350⁰. Grease a muffin tin. Combine all topping ingredients in a small bowl and mix well.
  2. In a medium blow, combine flour, baking powder and salt. In a large bowl, combine bananas and eggs. Stir sugar and vanilla into banana mixture and mix well. Add melted butter and mix well. Add flour mixture and blueberries to banana mixture. Stir until just combined.
  3. Spoon batter into muffin tin and sprinkle each muffin with a bit of topping mixture, dividing equally between muffins until all the topping is used up.
  4. Bake for 25 to 30 minutes, until muffins are golden brown. Let stand for a few minutes before removing muffins to a cooling rack.

Blueberry PancakeBlueberry Pancakes

Recipe Ingredients:

  • 1 ¼ cup flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ¾ tsp salt
  • 1 1/3 cups milk
  • 1 egg
  • 3 tbsp canola oil
  • 1 cup fresh bluberries

How to Make It:

  1. Combine flour, sugar, baking powder and salt in a large bowl. Stir in egg, milk and oil.
  2. Heat a little oil in a frying pan over medium heat.
  3. Drop pancake batter onto frying pan by ¼ cups, and then drop a small handful of fresh blueberries into the batter. When bubbles form and start to burst, flip pancakes and cook until golden.
  4. Remove to a warm service dish and repeat with remaining batter and blueberries. Serve with real maple syrup.

Blueberry CobblerBlueberry Cobbler

Recipe Ingredients:

  • 4 cups blueberries, washed and dried
  • 1 cup sugar
  • 8 tbsp cold butter, cut in small bits
  • ½ cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • ½ tsp vanilla extract

How to Make It:

  1. Preheat oven to 375⁰ and grease a 9” round baking pan.
  2. Mix blueberries and ½ cup of sugar and spread in bottom of pan.
  3. Mix flour, baking powder, salt and ½ sugar in a medium bowl. Add butter and mix well. Add egg and vanilla and stir until just combined.
  4. Drop batter mixture onto blueberries by dessertspoonfuls and bake for about 40 minutes until golden. Serve hot from the oven with vanilla ice cream.

Blueberry Pie

Recipe Ingredients:

  • 1 storebought pie crust
  • 5 cups blueberries, washed and dried
  • ¾ cup sugar
  • 2 tbsp cornstarch
  • ¼ tsp cinnamon
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp butter
  • 1 tbsp milk

How to Make It:

  1. Mix blueberries with sugar, cornstarch, cinnamon and salt. Add lemon juice and zest.
  2. Pour mixture into bottom pie crust, piling high in the center.  Dot with butter and cover with top crust and press edges together. Refrigerate for 30 minutes.
  3. Preheat oven to 450⁰, brush pie crust with milk and sprinkle with a light dusting of sugar.
  4. Cut about 5 small slits in the top of crust to let steam escape.
  5. Set pie on a baking sheet and place in oven for 10 minutes then reduce heat to 350⁰ and continue baking for 45 minutes.
  6. Serve pie warm with vanilla ice cream.

Blueberry SaladBlueberry Salad

Salad ingredients:

  • 10 oz package Mesclun mix
  • ¼ cup walnuts
  • 1 pint fresh blueberries
  • ¼ cup crumbled feta

Dressing Ingredients:

  • ½ cup olive oil
  • ½ cup raspberry wine vinegar
  • ½ cup sugar
  • 2 tsp Dijon mustard
  • ¼ tsp oregano
  • ¼ tsp black pepper

How to Make It:

  1. Mix all dressing ingredients in a small bowl.
  2. In a salad bowl, combine all salad ingredients and toss with ¼ cup of dressing. Store remaining dressing in a sealed container in the fridge for up to a week.

    Blueberries are my favorite berry and possibly my favorite fruit. These recipes sound great. I think I’m going to try them out one at a time and see which my family prefers. I’ll add their favorites to my recipe file.
